I love to cook, but I also love it when you get big flavor with very little actual cooking. Even better? When there’s nothing to clean-up. This is why I got over-the-moon excited when my Food Network Magazine arrived last month and in it was a booklet with 50 things to grill in foil.
I scoured that booklet up and down, circling many a recipe. I’ve put together several menus that I’ll be featuring this summer, but here is my first installation. An al fresco menu, perfect for a mid-summer’s night dinner.
Grilled Gnocchi Marinara
Ingredients:
17 oz. vacuum packed gnocchi
1 1/2 cups of your favorite marinara
1/4 cup of basil, thinly sliced
1/2 cup shredded mozerella
Directions: On a large piece of foil, prepped with cooking spray, layer gnocchi, basil, marinara and cheese. Wrap in foil and seal. Place over high heat on the grill and cook for 10 minutes.
Roasted Broccoli
Ingredients:
1-2 heads of broccoli
2 gloves of garlic, sliced
Salt, Pepper, and a dash of Red Pepper Flakes
Directions: Place broccoli in foil prepped with cooking spray. Top with garlic and seasoning. Seal tightly and grill over medium heat for 10 minutes.
Grilled Peaches
Ingredients:
1 peach per person, quartered
1 tablespoon of cubed butter
1 teaspoon of vanilla
3 tablespoon of brown sugar
Directions: On a large piece of foil coated with cooking spray, toss peaches and remaining ingredients. Seal tightly and grill over medium-high heat for 12 mintues.
**Be careful when opening all foil packets after removing them from the grill. Very hot steam will escape!!**
