In October, I got the chance to go to Iowa and visit my grandpa for his 97th birthday. 97! It had been several years since my last visit with him and this last year in particular has been very precarious for him health-wise. My dad had decided to throw him a birthday party, and my sister and I knew it was important for us to go.
To be honest, I wasn’t sure what to expect. I haven’t spent a lot of time with grandpa in a while, but when I was a kid I remember him being strong-willed, very opinionated, and oh-so loving.
Let me just say, it’s all still there. We went to his home on Saturday morning before the party. My dad had decided that grandpa was going to show us how to make a recipe he’s proud of: Stuffed Hashbrowns.
Words cannot tell you how amusing it was to see this dish get put together. My grandpa barked orders at my dad, my sister and me.
“Get the pie plate! Don’t you know what a pie plate is, son?” In my dad’s defense what my grandpa calls a pie plate, I’d call a salad plate.
“Don’t just clump ’em on there!” This one was directed it at me as I was layering the “stuffing” of the Stuffed Hashbrowns. It’s a delicate process.
“He picked a helluva time to go to the bathroom.” Apparently, you need a man to flip the hashbrowns. Us women folk can’t be lifting skillets.
I’m sure Angie got yelled at too, but she was definitely grandpa’s favorite of the morning. And although my pride was hurt (I mean, I think I’m quite proficient in the kitchen), it was the highlight of my year to see my dad following someone else’s orders and catering to his dad’s needs. #priceless
That morning is one of those never-gonna-forget-it mornings, because it reminded me how incredible family is. But another reason why I’ll always remember it? Because the Stuffed Hashbrowns were freaking incredible. My grandpa has been known to come up with really odd recipe combinations, but when he does it right… it’s right.
Admittedly, I probably have a few years of practice before I master Grandpa’s version. He has 97, so I’m hoping it won’t take me that long. Until then, I came up with my own version…
Where as Grandpa’s version was stuffed with egg, mine were filled with Brown ‘N Serve Sausage links, mushrooms, and onions, and the whole thing is smothered in pepper jack cheese.
To make this delish breakfast dish (although it would be great for dinner too!), first heat the Brown ‘N Serve sausage links.
They are pre-cooked, and can be warmed in the microwave or skillet, plus they are protein packed. I also sauteed up mushrooms and onions.
Next, you’ll take shredded potatoes and place them in an oiled skillet, then add your mixture of chopped Brown ‘N Serve sausage, mushrooms and onions. Don’t just clump ’em on there.
Top with another layer of potatoes.
Mid-way through the cooking process, you’ll flip the hashbrowns (making sure that the man in the kitchen doesn’t go to the bathroom so that he’s available to assist), then cover with cheese.
