Like me, you’ve probably got non-stop activities from now until the BIG day, and lots of those include parties with friends and family. It’s a tough life, but someone’s gotta live it. 😉
With all of this partying and drinking going on, when I’ve been asked to bring along a dish to share, potluck style, I’ve been bringing healthier dishes with me. Sure, I’ll indulge in a cheese tray and cookies, but with me, I’ll take a little something on the lighter side. Plus, I know that with so many people on special diets, that a vegan and gluten-free dish is sure to be a hit for a lot of guests!
I love a creamy broccoli salad, and am delighted to learn that dairy-free mayo does the trick just as well. When at a party, I love a finger food, so to add a fun twist to the recipe, I’ve served the broccoli salad in lettuce “tacos.”

- 2 heads of broccoli florets
- 1 cup of grapes, sliced
- 1 cup of shredded carrots
- 1/4 cup of red onion, diced
- 2 apples, thinly sliced
- 1/3 cup of raisins
- 2 heads of lettuce
- 1 cup dairy-free mayonnaise
- 2 tbsp. lemon juice
- 1 garlic clove, minced
- 1 tsp. raw honey (optional)
- Sea salt and freshly ground black pepper
- 1/4 cup of thinly sliced parsley
- In a bowl, combine all the ingredients for the dressing. Mix well and season to taste.
- Combine the salad ingredients together.
- Mix in dressing to taste. Serve in lettuce cups immediately, or refrigerate.
