It’s clear that Santa and my family have gotten pretty tight, which is why I can vouch for his love of these powder sugar coated sugar cookies.  Easy to make, fun to cut out, and dusted with sugar “snow,” it’s not hard to discover why these are Santa’s Favorite Sugar Cookies.

Preheat oven to 350 degrees and coat with cooking spray or line a baking sheet with parchment paper. Set aside.  In the bowl of your stand mixer, cream the butter and sugar until light and fluffy.  Add the egg and vanilla and beat on medium-high until fully combine, about 2 minutes. Scrape down the sides and bottom of the bowl as needed.

Sift the flour, baking powder, and salt together in a small bowl. Turn the mixer down to low and add half the flour mixture, beating until just moistened. Add the rest of the flour and continue mixing until just combined.

Flour your clean counter surface and dump out the dough. Flour your rolling pin and roll out the dough to desired thickness.  The thicker the cookie, the fluffier they will be when baked.

Cut out shapes and transfer to prepared baking sheet.  Chill for 15 minutes in the refrigerator.

Bake for 10 minutes until cookies are set and just started to get golden on the edges.

Remove from the oven and cool for five minutes before generously dusting with powdered sugar.  I like to use a flour sifter for this.  Enjoy with a cold glass of milk… just the way Santa likes it!
