Y’all. It was a totally gorgeous weekend. Definitely one of those “this is why I live in the South” weekends.
We spent a lot of time on our newly redecorated patio; pretty much eating every meal al fresco. In the evenings, we enjoyed a glass of wine and the fire. Pure perfection.
To celebrate the new outdoor space, we hosted a little get together with family and try some of what will surely be my go-to grilling recipes this season. What’s family for if not to experiment on?
I love cooking with turkey. Not only is it a lighter protein option, but I love how well it bends do different flavors. For this little shindig, I explored cooking turkey with some really fragrant Turkish-inspired spices.
Have you ever had Kofta before? Traditionally made with lamb, the long sausage style patties are grilled kebab style and served with a yogurt dip and fresh veggies. Using turkey for this recipe worked really well and I’ll definitely be making versions of this recipe all summer long!
To make these delicious kebabs, mix ground turkey with curry, coriander and spices. The meat is then shaped into patties, threaded on the skewers and grilled. So. darn. good.
I also love grilling pizza, and thought I’d prepare turkey brats in beer then serve them with ooey-gooey cheese and caramelized onions for a real treat. Let’s just say it was a hit.

Grilled Turkish Kofta
Ingredients
- Yogurt Sauce:
- 1 1/4 cups plain Greek yogurt
- 1 tablespoon of fresh lemon juice
- 1 clove of minced garlic
- 1 handful of minced fresh parsley
- 1/2 cup of English cucumber, small dice
- Pinch of salt
- Kofta:
- 2 pounds of Shady Brook Farms ground turkey
- 1 bunch of parsley, minced
- 1/2 tablespoon of salt
- 1 tsp. ground coriander
- 1 tsp. allspice
- 2 tbsp. curry powder
- 1 tsp. cumin
- dash of crushed red pepper (optional)
- Accompaniments:
- Sliced Tomatoes, sliced English Cucumber, Romaine lettuce leaves, Pita or Naan bead, lemon slices, red onion, parsley
Instructions
- Prepare the Yogurt Sauce: Mix all ingredients and chill until ready to serve.
- Prepare the Kofta: In a large bowl combine turkey, herbs and spices gently with your hands. Form into fat sausage-style patties and thread onto skewers. Chill until ready to grill.
- Heat grill to high. Grill the kebabs for one minute on each side to seal in the juices. The cook them for about 8 minutes longer, flipping them after 4 minutes. When just about done, add the pita/naan to the grill to warm it up before serving.
- Serve immediately with Yogurt sauce, bread and veggies.


Grilled Turkey Brat Pizza
Ingredients
- 1 package of Shady Brook Farms turkey brats
- 2 bottles of light beer
- 1 onion, sliced
- 2 tablespoons butter
- 16 ounces of fresh mozzarella (2 8oz balls)
- 2 thin pizza crusts
Instructions
- Pour beer into deep skillet. Poke a few hole in each brat and add to the beer. Bring to a simmer and cook for about 20 minutes.
- Remove from the beer, allow to cool slightly. At this point you can simply slice the brats for the pizza, or grill them for a few minutes per side to get some nice grill marks, then slice them.
- Meanwhile, add the butter to a skillet and melt over medium heat. Add the onions, and stir occasionally. They are done when they are a nice golden color. If you start to see blackening, turn down the heat.
- To each pizza crust, add 8oz. of sliced fresh mozzarella, 1/2 onion mixture, and half of the sliced brats.
- Place the prepared pizzas on a pre-heated grill at medium-high temperature. Close the lid and cook until cheese is melted and has a slight golden color. If the crust starts to brown before the cheese melts, turn down the heat.
