Well, my dear friends, tomorrow is New Year’s Eve. Yep, you know, that holiday when before we had kids to take care of, we would get all dressed up, go out for dinner, get really boozed up on cheap champagne, then kiss whatever happened to be near us when the clock struck twelve. Remember? Well apparently, my mom-friends did not.
Which got me thinking… what are you doing for New Year’s Eve? Apparently, if you are a parent, not much. It’s certainly not the easiest night to rally up a babysitter. Which is why for the past three years I’ve spent the Eve of New Year’s at home or at someone else’s home. And in all honesty, they have been some pretty memorable New Year’s Eves. In fact, I’ve remembered much more about the last three New Year’s Eve’s than I have the ten prior! 🙂
So, if like me you are stuck at home, go ahead and plan on making the most of it. Put the kids down a little early, prepare a nice and easy dinner for you and the hubs, scrounge up a bottle of decent champagne, and pick out a movie to keep you entertained until the ball drops at midnight.
If you need a little help in the menu department, I’m including the menu that I plan to make. Pretty simple, but a little on the special side to fancy things up for the holiday evening. And, if you need a bottle of bubbly to liven things up a bit, stop by the Winestore at South Park or Ballantyne. They’re offering 10% off their sparkling wines through tomorrow.
Menu:
Appetizer/Snack: Spicy Roasted Chickpeas (use any leftovers on top of salads or in a soup)
Main Course: Simple Lobster Risotto, and Greens with Apricot and Fennel
Dessert: Chocolate and Red Wine Fondue with Strawberries and Pound cake
