Menus on Mondays: 9/10/12

I’ve been a hungry bunny lately.  I blame the slightly less humid weather.  I think it’s telling my body that winter is coming and I need to start eating lots to store up for winter.  Unfortunately, that’s exactly what I’ve been doing.  Where has my will power gone?  Does it not know I’m going on a beach vacation in a few weeks?

So, in addition to hitting the elliptical with a fierceness I haven’t pulled out in awhile AND adding in an ab routine, I’m also going to try and eat a little lighter this week.  Want to join me? Here’s my menu.
















Monday
Veggie Primavera Quinoa
Grilled Chicken – I just marinate the chicken in Allegro all day, then grill on a grill pan

Tuesday: Vegetarian
Healthy Mexican Sweet Potato Skins
Marinated Cucumbers





















Wednesday: (Optional) Vegetarian
Portabello Pizzas – use whatever toppings you usually like on pizza
Grilled Asparagus

Thursday – Vegetarian
(Broccoli) and Cheddar Quiche with Brown Rice Crust
* I’m actually going to use marinated artichokes and roasted garlic instead of the broccoli, but that’s just because it’s what I’ve got to use up.

Friday – Vegetarian
Spinach, Caramelized Onion and Goat Cheese Quesadillas
Carrots with Guacamole for dip

Middle Easter Spiced Turkey Burgers
Grilled Garlic Naan (Trader Joe’s)
Roasted Carrots (tossed with Garam Masala)

    I wouldn’t mind trying out the turkey burger. My mom has gotten me kind of hooked on ground turkey.

      It’s fantastic! You don’t notice it’s turkey because of all of the wonderful spices!
