Taste of Inspirations: An Olive Oil Collection Giveaway

I’m finding it only slightly ironic that I’m sharing this giveaway after over-hauling my pantry yesterday.  One of the hardships I was met with during that challenge was finding accommodations for my recently acquired olive oil collection.  Not long past, my friends at Food Lion sent me a sampling of their Taste of Inspirations Olive Oil line.  And although I go through olive oils like a champ, I still had to wrestle some space for them.

I’ve got my Greek olive oil both fresh and peppery, the California with fruity zest, Italian with aromas of almonds and the Spanish olive oil with a hint of mild pepper.  All which I have special uses planned.  So, clearly, they needed a proper home.  Don’t worry.  They got top-shelf priority.

For my first recipe that I’ve made with the olive oils, I selected  the Spanish olive oil.  I made this recipe for an impromptu dinner gathering in which I needed a quick app.  I love how easy the recipe was to pull together, and I think the olive oil really shined! Or is it shone? I’ve gotten myself confused.

White Beans in Herb-Infused Olive Oils with Tomatoes

Ingredients
1/2 cup of Taste of Inspirations Spanish Extra Virgin Olive Oil
One can of Cannellini beans, rinsed and drained
Handful of sliced fresh sage
Two cloves of smashed garlic
Two plum (or roma) tomatoes, diced
Salt and Pepper

Directions: Warm olive oil, thinly sliced sage, and garlic in a small saute pan over medium heat.  Remove pan from burner when you hear a “sizzle.”  Allow to cool.  Remove garlic and discard, or mince and return to oil.  Toss with beans and tomatoes and season with salt and pepper.  Serve with fresh bread or pita chips!

I’m thinking of using the fruity California olive oil for this Rosemary-Olive Oil cake!  Don’t you think that will pair nicely?  You know that’s coming up on a Menus for Mondays weekend cooking menu plan soon!

    I overhauled my pantry today, given your inspiration & advice! I now have room for some new olive oils – yay! My husband couldn’t believe the transformation & is thrilled I’ve taken on this challenge of organizing in 2013!

    I would choose Italy and Spain. We cook a lot of Italian cuisines. However, I’m a huge fan of Spanish cuisine as well.

    Oh, I would choose to travel to any of these great countries. We went to Spain on our honeymoon
    and would love to return some day. I am going to definitely try this white bean recipe. It looks delish!!!

    Honesty I couldn’t believe the level of the quality of these oils. Tried first the greek and then I had to buy all the other oils too.
    Excellent oils , fresh, fruity and so distinct from each other. Priced so reasonably. In my opinion some of the best olive oils I have ever tried.
