Weekly Meal Plan: Late Winter Collection

I’m really looking forward to cooking this week. Unfortunately last week’s menu plan didn’t go according to, well, plan.  My digestive system went on hiatus for several days… let’s just say I lost some unexpected weight.   Water weight, but hey, gotta look for the silver lining when these things strike!

Anywho, I was really looking forward to putting together a bright and happy menu plan chock full of spring’s bounty, but looks like winter is clinging on with mighty fists, at least in these parts.  I’m getting mighty sick of this weather, but you can’t fight mother nature.  So, we’ll be sticking to the earthy flavors of late winter for just one more week, then hopefully… these March cold showers will bring some delightful April flowers!

Monday: Comfort Food

Pork and Green Chili Casserole: From BHG.com
Mexican Slaw with Mango and Avocado: From Cookin’ Canuck

Tuesday: Vegetarian

Orzo with Lemon Artichoke Pesto (link to Orzo dish, link to Pesto): From FoodDoneLight.com
Roasted Carrots: Peel and quarter carrots.  Toss with olive oil, garam masala, salt and pepper.  Roast at 450 degrees for 25 minutes, flipping once.

Wednesday: One Dish Dinner

Thai Shrimp Curry: From Bev Cooks

Thursday: Vegetarian

Baked Rigatoni with Spinach, Ricotta and Fontina: From Food & Wine Magazine
Mixed Green Salad

Friday

Lazy Sunday Casserole: From Kayotic Kitchen (Everyone deserves to take it easy on Friday night!  Easily adaptable if you have guests in town.)
Steamed Green Beans tossed with herbs and olive oil
