Sometimes you just gotta do what feels good. And, in these last few weeks of summer before I send my oldest kid off to his first day of kindergarten, it’s felt darn good just to hang out with my boys. We’ve been hitting up the pool, spending time at the lake, and playing legos. Lots and lots of legos.
In the spirit of feeling good, I’ve compiled a feel good meal plan. Full of healthful summer produce and easy enough that you can have a full day of play and a full plate of goodness at the end of day. Without even breaking a sweat. At the stovetop, at least!
Monday, Vegetarian
Caprese Sandwiches: Pick out a great bread and layer tomatoes, fresh mozzarella (sliced), fresh basil, and drizzle with olive oil and aged balsamic vinegar. Enjoy! You can heat it on a panini grill if you like.

Drink: Beergaritas – mix 12 ounces of frozen limeade with 12 ounces of tequila. Stir in two beers (I prefer a something simple like Miller Lite or Corona). Serve over ice. Don’t drink too much!
