When’s the last time you poured yourself a glass of Cherry Kool-Aid? Yeah, it had been awhile for me too. I was shopping at Walmart last weekend, when they were having a Kool-Aid demo with their new Kool-Aid Easy Mix product and I sampled one. Holy Childhood! It took me back about 30 years. (Ugh – 30 years!?!?!?)
Isn’t it funny when something like a taste or a smell takes you back to a very particular place and time? Cherry Kool-Aid totally did that for me! That taste and that memory inspired this post – a Grown Up After School snack. I mean, I get hungry in the afternoons too, and why not treat myself to a grown up version of the childhood tradition.
In fact, this went over so well, that my kids are now chomping at the bit for me to make these for them! Let me introduce you to Goat Cheese and Herb Roll-Ups, and the absolute easiest way in the world to make a pitcher of Kool-Aid!
For the Goat Cheese and Herb Roll-Ups, whip one package of room temperature Reduced Fat Cream Cheese and an 8 oz. log of goat cheese with a hand held mixer. Smooth onto your favorite wrap (I like the herb and garlic ones).
Next sprinkle on your toppings! I made a little basil chiffonade (fancy for thinly sliced).
And then some pistachios and cranberries.
Roll it up, and slice in half. Voila!
With Kool-Aid Easy Mix, you just add water – just add water, which is perfect for making it by the pitcher or by the glass!
