It’s no secret that I am pretty bad at baking.  I find it super intimidating.  When I cook dinner, I throw a little bit of this in and a little bit of that tasting along the way, and knowing that I can always make adjustments if needed.

The precision of baking throws me off.  How you have to measure everything, and you don’t really know what it’ll taste like until it’s done baking.  Too late, then, to fix any errors.

When it comes to desserts, I try and find recipes that play to my strengths – putting together good flavors – and avoid things like baking soda and the oven.

That’s why I love this recipe, Ice Cream Nutella Crunch Cake.  It’s perfect for birthdays.  I mean, who doesn’t love an ice cream cake?  It has Nutella.  ‘Nuff said.  It has crispy bits of yumminess layered throughout.  It requires no baking.  And? You can taste every little bit along the way!  Winner winner, ice cream cake dessert.  Sure wish that rhymed…

To make, you’ll add one jar of Nutella (the big one) to a heavy-bottomed pan.  Toss in six or seven cups of Rice Krispy cereal.  Over low heat, stir occasionally, until cereal bits are coated.

Pour the mixture out onto a baking sheet lined with wax paper and place in the freezer for 30-45 minutes.

Once cold, chop up your Nutella crunchy bits then stir into your favorite Blue Bunny ice cream flavors.

I picked Vanilla and Chocolate during my last Walmart shopping trip, but next time I might add Butter Pecan.  Because I can.  Be sure to reserve two cups of the cereal mixture.

Add dollops of each ice cream flavor into a chilled spring form pan.  Press down so you don’t get any air holes into your cake.  Then, top with the reserved Nutella Crunch.  Chill overnight then serve.

Ice Cream Nutella Crunch Cake Recipe

Ingredients

  • 2 flavors of Blue Bunny Ice Cream
  • 1 large container (26 ounces) of Nutella
  • 6-7 cups of Rice Krispy cereal

Instructions

  1. Place the ice cream in the refrigerator to soften. You'll need it to be soft enough to stir, but not pour. It took mine about 45 minutes to soften to the right consistency in the fridge. Also place a 9 inch spring form pan in the freezer to chill.
  2. Over low heat, mix Nutella and cereal in heavy bottomed pan. Stir frequently and remove from heat once the cereal is well coated. Pour mixture out onto wax paper lined baking sheet and smooth out. Place in the freezer to chill.
  3. Allow to chill for 45 minutes then chop into crumbles. In medium size bowls add most of each container of ice cream and stir in the cereal crumbles. (My spring form wouldn't have held all of the ice cream from both - but if yours does, go for it!) Reserve 2 cups of crumbles for the top.
  4. Once the cereal mixture is stirred into the ice cream flavors, add dollops of each flavor to the spring form pan. Continue to add until the dish is full, then press down to make sure you don't get any air bubbles. Top with remaining cereal crumbles, then wrap with Press & Seal and return to the freezer overnight.
  5. Release from spring form pan when ready to serve. Enjoy!
