It seems more often than not I’m scrambling at dinner time.  Either I forgot to defrost something, I ran out of a key ingredient, or I flat out ran out of time.  I know it happens to you too.  Let’s brain mommy brain.  Or life in general.

On evenings such as these, I rely on my well-stocked pantry to get me through until I can put the kids in bed and call it a day.  On evenings such as these I make one of my favorite new go-to meals that not only comes together in just minutes, but also is super-duper healthy: both dairy and gluten free… dare we call it Paleo?

I always have a few cans of Bumble Bee® Chunk White Albacore, which happens to be the powerhouse ingredient of these fantastic Curried Tuna Fritters.  I need a protein packed dinner at the end of the day and this fits the bill.  Add in lots of veggies and a little spice and you’ve got a great meal when served on top of salad, buckwheat noodles or (cauliflower) rice!

To make, simply grate a zucchini into shreds, and toss along with a cup of chopped spinach.  I like fresh spinach for this recipe, but since we know that sometimes you just don’t have fresh on hand, thawed and drained frozen spinach will fit the bill.

Next we’ll add in our  Bumble Bee Albacore and spices, including a heavy hand o’ curry, one of my favorite go-to flavor profiles to add a quick one-two punch to my dinner.  Give everything a good little mix and you’re ready to “fry” ’em up!

Heat your cast iron skillet over medium high heat and use whatever fat is appropriate for your special diet – ghee, butter, olive oil, coconut oil.  Do you what do and let’s start cooking.

You’ll get about 6-8 fritters out of the recipe.  Once your oil is hot, drop in pre-formed “patties” into your oil and allow to cook about 3-4 minutes per side until golden.

Proceed with the rest of your batch and you’re ready to serve.   Take it up a notch even more on the flavor scale by adding your favorite hot sauce!

Paleo Curried Tuna Fritters

Yield: 6-8 Fritters

Ingredients

  • 12 ounces Bumble Bee Chunk White Albacore, drained
  • 1 cup spinach, chopped
  • 1 large zucchini, grated
  • 2 tablespoons curry powder
  • 1 teaspoon red pepper flakes
  • 1 tablespoon minced ginger
  • 2 eggs
  • 4 tablespoons of preferred fat (coconut oil, ghee, butter, olive oil)

Instructions

  1. In a large mixing bowl, combine all ingredients except oil. Stir until incorporated.
  2. Heat a cast iron skillet over medium high heat and melt oil/fat. Add fritters in batches and cook until golden, about 3-4 minutes per side.
