Familiar with the term WAHM? I wasn’t until I became one. Once you have kids, everyone and everything in your life can be described as an acronym… DH, DS, DD. Those are all popular ones that I have yet to succumb to, but translate to Dear Husband, Dear Son, Dear Daughter. I don’t know about you, but I know very few people who can consistently maintain the designation “dear.”
There’s the mommy board lingo: TTC (trying to conceive), EBF (exclusively breast-feeding), and NAK (nursing at keyboard). Then there’s the SAHM, WAHM, and the WOHM. I’m drafting this blog post particularly for the latter (work at home and work out-of-home moms).
Most stay-at-home moms don’t get to pee by themselves, forget making lunch. You’ll get by with the leftover crusts of that PB&J. I’ve been there…
As a working mom, my life seems slightly more crazed, but I do find time to actually eat a lunch of my own, even if it is in front of the computer. Making sure I carve out time for a well-balanced meal with veggies, whole grains and protein is super important to me. Need to make sure I have enough fuel for my workouts and to play with the kids after work!
Here are three easy lunchtime meals that are easy to prep, delish, and will keep you fueled until dinner:

I’m a fan of all of the Healthy Choice Steamer Meals (makes perfectly sauced meals!), but am particularly fond of the Healthy Choice Simply Café Steamers. These meals all have all less than 310 calories and more than 18 grams of 100-percent natural protein. You can find Healthy Choice Café Steamers in the freezer section of the grocery aisle.
Protein-Filled Salads: In the spring, I really and truly crave a salad. But not just a little lettuce. My salads are loaded with chopped cukes, carrots, tomatoes, a few crumbles of feta, and then some leftover grilled protein from the night before. One of my favorites is lightly seared tuna. Delish. I bypass the regular dressing and just drizzle my salads with EVOO, balsamic vinegar and a little bit of salt and pepper. Doesn’t get any better.
Leftovers: I always have more time to make dinner than I do a lunch. And making a little extra is usually no problem. Whenever I’m making a pasta side, or grilling meat, I always cook more than I need. One of my favorites is the meal pictures above – Grilled London Broil with a Whole Wheat Orzo Salad. Tastes just as good (if not better) the next day!
