Summer Entertaining Menu: Featuring Grilled Salmon on Himalayan Salt Plates

Hello May! Is there any better month? Bye bye pollen. Hello sunny afternoons. The pools are opening, and it’s time to entertain outside.

Needless to say, with my recently renovated deck area, I’ve been entertaining non-stop. Enjoying friends and drinks outdoors with all of the comforts of the indoors is about as good as it gets.

If you haven’t dropped by to share a glass of vino with me yet, here’s a little peek at my deck.

Grilled Salmon on Himalayan Salt Plates

A few of my favorite touches include the World Market Solano Outdoor Sectional (so comfy and roomy!), the table/fire pit table, and then all of the little finishes like flowering plants and throw blankets.

The other night I was fortunate enough to have a good friend of mine in town with her twin babies. Needless to say, we stayed in. (Anyone know of babysitter willing to take on five kids? I don’t.) But, just because we were staying in, didn’t mean we couldn’t have a great time and fabulous food.

Here’s a perfect menu that is not only a breeze to prepare, but is totally impressive. Make sure your guests see you bust out the salt plates. They are a true crowd pleaser! Without further ado, let me introduce you to your new favorite outdoor entertaining summer menu:

Yup. Told you it would sound fancy pants. But wait ’til you see how easy it is. Seriously… just ten minutes of cooking time. Which means you get to sip on your favorite glass o’ wine and hang out with your friends!  Not only that, but everything for the shindig (even the wine!) can be found at one of my absolute favorite stores: World Market.

First up, simply heat the salt plates over medium low heat for about 30 minutes. They just need to come to temp slowly, but they can take a super high heat. Once your grill is about 400 degrees, you’re good to go. Meanwhile, heat your oven to 450 degrees, and bring 3 1/2 cups of water to boil.

Once everything is ready to go, place your salmon directly on the salt plates. Nothing else is needed. Feel free to sprinkle a little pepper on, but really, don’t do anything else! Cook for about 10 minutes, or until the fish flakes easily.

Put the asparagus in the oven with a little olive oil, salt and pepper. Roast for 10-12 minutes. You’ll also toss in the World Market Couscous Medley into the water. That’s also 10 minutes.

Once it’s all done, just plate it, and give your plate a little dollop of lemon curd. The sweetness is perfect with the saltiness that gets picked up from the grilled salmon.

Top with a few flecks of the Falksalt Natural Smoke Salt Flakes for an impressive (and really lovely) smokey finish. I like a rich and buttery white wine with this dish, but you drink what you like… it’s always gonna taste best! 🙂

Yield: 4 servings

Ingredients

  • 4 filets of salmon, skin removed
  • Himalayan Salt Plates for grilling
  • Harrowgate Lemon Curd
  • Falksalt Natural Smoke Salt Flakes
  • World Market Pepper Supreme

Instructions
