I’ve been making a toffee recipe that I found in Southern Living magazine for years now.  As a self-proclaimed non-baker, it’s a recipe that requires very little finesse, tastes amazing, and is refined enough to stand up well against any other dessert in a holiday cookie exchange.  It’s my ace up my {elf} sleeve.

But in true Katie fashion, I can’t leave this toffee recipe alone.  I’ve added nuts, I’ve removed chocolate.  But, truth be told, this… this change is by far the best riff on the recipe ever.  Because it has bacon.

Yup, in this family, bacon makes everything better.  And this Salted Caramel Bacon Toffee recipe is one that I no longer need to mess with.  It’s perfection.  #humblebrag

Ready to get cooking?

First you’ll line up graham crackers tightly in a jelly roll pan covered with aluminum foil and coated with cooking spray.

Now, let’s cook some bacon!  I’m using Smithfield Hometown Original for this Salted Caramel Bacon Toffee recipe, but any variety would do!

Freeze bacon for 45 minutes to make slicing easier.

I place the bacon in the freezer for 45 minutes or so prior to cutting.  It makes it so easy to slice.  Cook the bacon until crisp and drain.  I used the whole pound (well, the whole pound after my family and I nibbled).  Set aside.

It’s caramel time.  Mix the cream, butter and sugar in a heavy saucepan.  Stir often and cook over medium heat until it comes to a simmer and the mixture is smooth.  Pour the caramel mixture over the graham crackers.  Top with chopped pecans and press into the caramel.

Bake at 350 degrees Fahrenheit for 15 minutes, until golden and bubbling.  Immediately sprinkle with chocolate.

Let the chocolate sit for to melt slightly for two-three minutes, then smooth with a spatula.

Immediately top with bacon, pressing it in to the chocolate with your hands.  Sprinkle with sea salt.

Allow to cool completely then chop into triangles.  Keep in an air tight container for up to four days.

Salted Caramel Bacon Toffee

Salted Caramel Bacon Toffee

Ingredients

  • 16 oz. Smithfield Bacon
  • 14-15 whole graham cracker sheets
  • 1 cup packed brown sugar
  • 3/4 cup butter
  • 2 tablespoons heavy cream
  • 1 teaspoon vanilla
  • 1 cup pecans, chopped
  • 1 cup chocolate chips
  • 1/4 teaspoon sea salt

Instructions

  1. Preheat oven to 350 degrees.
  2. Line a rimmed baking sheet with aluminum foil. Arrange graham crackers in a single layer to fill up the sheet.
  3. Slice bacon into thin strips, then fry in a skillet until golden and crisp. Drain and set aside.
  4. Combine sugar, butter, and cream in a heavy saucepan. Bring the mixture to a boil over medium heat, stirring often. Remove from heat and stir in the vanilla.
  5. Pour the mixture over the graham crackers, spreading to coat. Sprinkle nut on top and press into caramel.
  6. Bake at 350 degrees for 15 minutes, or until browned and bubbly.
  7. Immediately after removing from the oven, sprinkle the top with 1 cup of chocolate chips. Allow to rest for 3-5 minutes, then with a spatula, smooth out the melted chocolate.
  8. Top with bacon and press into chocolate, then sprinkle with sea salt. Cook completely before cutting into bars. Enjoy!

    My bacon bar recipe is bacon, smashed between two pieces of bacon, then wrapped in bacon. Then, maybe covered in a roll of ham? Anyway, send me the free bacon please.

    Oh your toffee sounds so good! I have not really cooked with bacon too much, oh they have so many recipes I would love to try! I think I would try the Bacon Topped Holiday Apple Pie first! That would be so fun to make for Christmas when the relatives come over!
