Although you won’t always know it from my blog, I actually try to eat a relatively health and well-rounded diet.  Especially during the colder months… anything to make me stronger during germ season!  Making good choices gets particularly trying during the holiday season.  It’s just so hard for me to walk away from a cheese plate.

Our Citrus Butter Salmon is both simple and elegant, perfect for holiday entertaining or everyday dining.  Loaded with Vitamin D, it's a great recipe to include for a healthier option during the decadent season.

So, just to make sure I “dot my i’s and cross my t’s”, I supplement my diet with select vitamins.  During the winter, when I’m spending a lot more time inside, I include Nature Made® Vitamin D in my vitamin regiment.  Vitamin D is synthesized by the skin when we’re exposed to sunlight during certain times of the day and year, and can also be found in a limited number of natural and fortified foods sources.

Making sure you get enough Vitamin D is important as it helps improve calcium absorption and supports bone, teeth, muscle, and immune health.† But unfortunately, 90% of US population do not meet their daily vitamin D needs!1  Which is why I love cooking salmon, a natural source of Vitamin D, during the winter months.

This recipe for Citrus Butter Salmon is popping with flavor.  The salmon gets the perfect crust during the pan-sear.  And, the fruit not only makes the finished dish look great, but it lends a gentle citrus flavor to the sauce as well.

Citrus Butter Salmon

Citrus Butter Salmon is both simple and elegant, perfect for holiday entertaining or everyday dining.  Loaded with Vitamin D, it's a great recipe to include for a healthier option during the decadent season.

Preheat your oven broiler to low.  Season the filet generously with salt and pepper on both sides.  Bring a large skillet to medium high-heat and drizzle with olive oil.

Lay the salmon carefully in the skillet, with the skin-side up.  Allow to cook 3-4 minutes, until you get a nice golden crust.  Gently flip the salmon, using a fish spatula if you have one, and continue cooking another 3-4 minutes.

Intersperse the citrus on top of the salmon, along with the pats of butter.  Place about 8 inches away from the broiler and cook for another 3-4 minutes.  Make sure the salmon reaches the desired level of doneness, the butter has melted, and the citrus has released some of their juices.

Plate on a platter with the citrus, and a little bit of the citrus butter drizzled over top.  Garnish with parsley, if desired.

Ingredients

  • 1 1/2 lbs. salmon filet, skin removed
  • salt and pepper, to taste
  • olive oil
  • 2 lemons, thinly sliced
  • 2 mandarins, thinly sliced
  • 2 Tb. butter, cut into small pieces
  • parsley, for garnish
