Anywho, that’s all just a long explanation to say, we don’t serve stuffing, we serve dressing. In my opinion, it’s the same thing, except for how you prepare it – either in or outside of the turkey. I play around with the dressing, always riffing on favorite flavor combos. But, one thing stays the same – there’s always rice and pork sausage.
This year, my dressing is being served Southern Style. Chock full of pork sausage and shrimp, and tossed with flavorful brown rice with the perfect amount of kick. Flavored with TABASCO® brand Original Red Sauce, this Dirty Rice Dressing has the perfect amount of spice to enhance the flavor of the rice without overpowering it.
And then, since our table is full of guests that luh-ove some hot sauce, we usually include a TABASCO® hot sauce bar, featuring TABASCO® Brand Pepper Sauce, Chipotle Pepper Sauce, and Green Jalapeño Sauce so each person can personalize their Dirty Rice Dressing with their favorite hot sauce.
Spicy Dirty Rice Dressing with Shrimp & Sausage
Cook brown rice according to package directions with chicken stock instead of water. My rice cooker requires three cups of stock for 1 1/2 cups of brown rice, but if you’re cooking the rice on the stovetop, just follow the directions on the rice package.
Along with the stock, also add the bay leaves, TABASCO®, paprika, and thyme.
When brown rice is close to being done, heat oil in a large skillet over medium heat. Add onion, bell pepper and garlic and saute until translucent. Add in sausage and cook, breaking it up, cooked through and no longer pink.
Add in shrimp, salt and pepper. Continue cooking until shrimp is pink.
Once the rice is done, toss the shrimp and sausage along with the rice. Pour into a serving dish and top with chopped parsley. Serve with additional TABASCO® hot sauces if desired.

Ingredients
- 1 1/2 cups uncooked brown rice
- 3 cups chicken stock*
- 2 bay leaves
- 1/2 Tbsp. TABASCO® brand hot sauce
- 1/2 tsp. smoked paprika
- 1/4 tsp. ground thyme
- 1 tsp. oil
- 1 onion, diced
- 1 green pepper, diced
- 4 garlic cloves, minced
- 1 lb. ground pork sausage
- 12 ounces shrimp, peeled and deveined
- salt and pepper to taste
- Garnish: additional TABASCO® hot sauces and chopped parsley
Instructions
- Cook brown rice according to package directions with chicken stock instead of water (see note), along with bay leaves, TABASCO®, paprika, and thyme.

Notes
*Note: The amount of liquid may change based on how it's cooked. My rice cooker requires 3 cups stock for brown rice, but if cooking on the stovetop or in a different style cooker, it may be different. If concerned, consult the product packaging!
This year may mark TABASCO® Brand’s 150th anniversary, but I think it’s the start of a Dirty Rice Dressing tradition in my house!
