Recipe for Awesomeness

My first true passion is cooking. I enjoy all things cooking related: kitchen gadgets, food magazines, preparing the meal, and most definitely eating! Recipes, however, tend to be the most fun to share with an audience, so I’ll pass on one of my most favorite of side dish recipes that I stumbled upon not too long ago: Caramelized Green Beans with Pine Nuts (from the Everyday Food Magazine). Here’s my adapted version:

Ingredients:
1/2 tb. butter
1/2 tb. olive oil
1 lbs. green beans, de-stemmed
2 tb. pine nuts (optional)
Salt and Pepper

Directions: In a large skillet heat butter and oil over medium low. Add green beans and cover partially with lid. Cook, tossing occasionally, until green beans are browned in spots. Approx. 30 minutes. Add pine nuts and cook for an additional 5 minutes. Sprinkle with salt and pepper, and serve. Serves 4.

    I’m in a Cooking Light supper club that meets once per month – it’s a great group of women and the hostess picks the theme, comes up with the menu and buys the ingredients. The guests make the dishes as the hostess enjoys an adult beverage (the hostess does make appetizers and puts all of the “stations” around the kitchen). It’s a LOT of fun and I have some fabulous menus and recipes from it.
