What’s Hap-pinning, vol.5: Looks good, but is it?

I’ve been cooking a lot from my “Recipes to Try” board from Pinterest. And, I’ve gotta admit, it’s no different than test-cooking recipes from friends, magazines, or from random Internet searches. Sometimes it turns out great, sometimes it’s a total flop. Here are a few that you’ll want to make, along with a few that you’ll want to avoid.

I’m doing the hard work for ya, so be sure to pin some of these keepers:


Chickpea Croquettes: I did make a substitution. For the three cups of garbanzo beans, I used one can drained garbanzo beans and one can of cannelini beans. I feel like the swap made the croquettes a little more “bind-able” than the original recipes suggests.


Slow Cooker Shrimp and Artichoke Barley Risotto. Loved the easy prep, but it was also oh-so flavorful. This recipe is a keeper!


Broccoli and Cheddar Quiche in Brown Rice Crust. Using the rice in the crust instead of pastry makes it much healthier. Just takes a little longer to make the rice than to use a already-prepped crust. I made extra rice so we could make Fried Rice later on in the week!


Monkey Squares. I had a few bananas that were a little past their prime. I made these and they were fab. I have an adaptation of the recipe that I’ll be sharing with y’all shortly, but these are great as is, too!

Now for the misses. Perhaps I was just having an “off” day in the kitchen, but these recipes will not be making an appearance on my table again:


Classical Brunch Casserole – using the tomatoes and uncooked spinach made this dish turn into a runny mess. My son actually called it a “hot mess.” Yeah, not good.

Rice Noodles with Broccoli and Almond Pesto – I’m not opposed to something being vegan, but I am opposed to something having a lack of flavor. This was both. A lackluster meal that took more effort than it should have.

    I tried the baked avacado fries, and was just “eh.” They were bland!!! The only redeeming thing about them was the hubby liked them, but he said he’d like them better with a good dash of chipotle or something in there.

    @Michelle – in my house, EVERYTHING is better with a dash of hot sauce! 🙂 good feedback on the avacado fries. haven’t pinned them yet, but have been tempted. think we may pass now!

    I made a sugar cookie bar recipe that sounded good but didn’t really work out. The dough was was too thick in the pan and it took way more time to cook than the instructions said so it dried out 🙁 even a giant pile of buttercream couldnt save it
