Or What I Shall Forever Refer To As: The Day to Celebrate Queso
I’m still going strong on my week of being vegan. Sure, I’ve had a few slip-ups: I totally licked my kids’ mac ‘n cheese spoon “by accident,” I didn’t realize I was using honey peanut butter, and who knew gelatin was in my Vitamin D supplement?
But, all in all I’ve been VERY good. I’ve been hungry, and oh, what I wouldn’t do for a creamy, cheesy plate of anything, but I’ve only got 1 1/2 days left. No problem, right? Wrong.
Tomorrow is Cinco de Mayo. The day where no one minds waiting hours at their local Mexican restaurant for their usual margaritas and tacos. The day where pals get together over homemade enchiladas. The day where I eat pounds of tortilla chips and queso. The day that I will forever regret ending my vegan week on. Ugh.
