Menus on Monday: 10/1/12

I left paradise yesterday after being on vacation for 9 days.  Let me tell you – reality is slapping me in the face.  Laundry, cleaning, blogging, kids… not to mention the rain.  Come on.  Give a girl a break.  My digestive system, however, is quite glad to be back.  There is only so much fried food, hot sauce, Presidente beer and pour-your-own Rum drinks a girl can take before her body begins to revolt.
Hence, my detox week.  Yep, this week, I’m going Vegan.  Anyone wanna give it a go with me?  The recipes are great despite the lack of meats and dairy.  And, if you don’t wanna go all-the-way Vegan, throw in a grilled chicken breast or sprinkling of cheese with some of these dishes to give the recipes a boost.  
Although I’ll be missing the palm trees and clear waters, I am so glad to be back with my boys and am looking forward to being with friends again.  I missed y’all!
*I’ll be preparing all of these recipes vegan-style.  To do that, I’ll either be omitting cheese or substituting Parmesan for nutritional yeast, and substituting butter for olive oil or coconut oil.
