Menus on Mondays is back this week on… Sunday! I’m heading to the store today and thought some of you might be as well. This week is a busy one for my family, so we are going to keep it simple. I hope to clear out some pantry ingredients and keep the grocery bill to a minimum, but still have tasty, healthy meals. Sound good? Let’s get started!

Monday – Slow Cooker
Steamed Sugar Snap Peas
Brown Rice (make double rice for Thursday’s meal)
Tuesday – Vegetarian (Optional Vegan)
* I add in a handful of frozen corn too, for color.
Garlic Naan Bread (frozen, from Trader Joe’s)

Wednesday – Vegetarian
Roasted Cauliflower: toss cauliflower florets with olive oil, salt, pepper, and herb of your choice. I like tarragon for this. Roast at 450 degrees for 20 minutes, flipping once.

Thursday – Comfort Food
Chicken and Rice Casserole (using leftovers from Monday’s dinner)

Friday – Optional Vegetarian
Butternut Squash, Proscuitto and Sage Quiche *to make vegetarian, omit proscuitto. If you don’t mind the meat but don’t have proscuitto, you can substitute bacon.
Butter Lettuce with Radishes dressed in Olive Oil and Balsamic Vinegar
Saturday – Pizza Night, Optional Vegetarian
Whole wheat pizza crust from Trader Joe’s
Top pizza with leftover veggies, cheese and meats from the week. I like to use a sauce blend of spaghetti sauce and a splash of BBQ sauce for extra flavor!
