Hearty Veggie Sweet Potato Tacos
Preheat the oven to 450 degrees. Mix red wine vinegar, honey, salt and red pepper flakes in small bowl. Toss with sliced shallots and set aside. In a rimmed baking pan, toss the butternut squash with olive oil, salt and pepper. Roast in the oven for 20 – 25 minutes, tossing occasionally.
Meanwhile, prepare the MorningStar Farms Grillers Crumbles according to package directions. Add in a tablespoon of chipotle in adobo a few minutes before removing from the heat if your guests like spicy food! It adds a nice pop of flavor. Once cooked, place the crumbles in a serving bowl and keep warm.
Clean out skillet and add a drizzle of olive oil. Add kale and season with salt and pepper. Cook for 2-3 minutes over medium high heat until slightly wilted. Place in a serving bowl and keep warm.
Microwave tortillas according to package directions.
To assemble the tacos, layer the Grillers Crumbles, butternut squash, kale and shallots in each shell. If you’d like, sprinkle a little bit of feta on top. Enjoy! These tacos are a great option for holiday gatherings including Thanksgiving, Christmas and New Year’s Eve.

- 1 16 oz. package of MorningStar Farms Grillers Crumbles
- 1 Tb. chipotle in adobo, optional
- crumbled feta, optional
- 12 tortillas
- For the shallots:
- 3 Tb. red wine vinegar
- 1 Tb. honey
- 1/2 tsp. salt
- pinch of red pepper flakes
- For the butternut squash:
- 4 cups of butternut squash, seeds removed, peeled and cubed
- 2 Tb. olive oil
- salt and pepper to taste
