Rich and heavy cuisine is fine… in moderation.  But during the holidays, it’s easy to lose track of the ‘moderation’ bit.  Which is why when I’m hosting, I like to mix it up and serve a lighter and healthier option for get-togethers.

We have a lot of vegetarian friends, and these Hearty Veggie Sweet Potato Tacos are perfect for everyone at the dinner table.  Featuring MorningStar Farms Grillers Crumbles, veggie cuisine is now for everyone!  Trust me when I say, you gotta “Taste It To Believe It”.

Hearty Veggie Sweet Potato Tacos

Holiday entertaining just got healthier!  With these Hearty Veggie Sweet Potato Tacos, all will be able to feast!  Filled with MorningStar Farms® Grillers® Crumbles™, roasted sweet potatoes and sautéed kale, the table will be merry and bright!

Preheat the oven to 450 degrees.  Mix red wine vinegar, honey, salt and red pepper flakes in small bowl.  Toss with sliced shallots and set aside.   In a rimmed baking pan, toss the butternut squash with olive oil, salt and pepper.  Roast in the oven for 20 – 25 minutes, tossing occasionally.

Meanwhile, prepare the MorningStar Farms Grillers Crumbles according to package directions.  Add in a tablespoon of chipotle in adobo a few minutes before removing from the heat if your guests like spicy food!  It adds a nice pop of flavor.  Once cooked, place the crumbles in a serving bowl and keep warm.

Clean out skillet and add a drizzle of olive oil.  Add kale and season with salt and pepper.   Cook for 2-3 minutes over medium high heat until slightly wilted.  Place in a serving bowl and keep warm.

Microwave tortillas according to package directions.

Hearty Veggie Sweet Potato Tacos

Yield: 4-6 servings

Ingredients

  • 1 16 oz. package of MorningStar Farms Grillers Crumbles
  • 1 Tb. chipotle in adobo, optional
  • crumbled feta, optional
  • 12 tortillas
  • For the shallots:
  • 3 Tb. red wine vinegar
  • 1 Tb. honey
  • 1/2 tsp. salt
  • pinch of red pepper flakes
  • For the butternut squash:
  • 4 cups of butternut squash, seeds removed, peeled and cubed
  • 2 Tb. olive oil
  • salt and pepper to taste
  • For the kale:
  • 4 cups of kale, stems removed
  • 1 Tb. olive oil
  • salt and pepper to taste

Instructions

  1.
