Quick ‘n Easy Weekly Meal Plan: 4/1/13

My house is going on the market this week.  In preparation for the big day (the day the sign goes up in the yard), we’re having the whole house repainted (inside and out), getting new carpet, and rearranging the decor.   The kids are out of school, the nanny is out of town, and  still have to work.  It’s gonna be one hell of a week.

Needless to say, I don’t foresee having ample time to put together dinners for my family.  I’m not even sure I’ll be able to access the kitchen with all of the stuff going on.  With that in mind, this week’s menu is quick and easy.  I’m sure the rest of you will appreciate that too!

weekly meal plan

Monday: Optional Vegan

Vegetable Soup, from Tumeric ‘n Spice
Breadsticks (from frozen food aisle)

Tuesday – Taco Night, Optional Vegetarian

Oven Tacos: From Mommy I’m Hungry – we’ll be making these with black beans, guac, cheese and salsa
Roasted Corn with Cherry Tomatoes: Toss frozen corn with drizzle of olive oil S & P.  Roast at 450 degrees, stirring once until charred in spots.  Toss with chopped cherry tomatoes)

Wednesday – Slow Cooker Dinner

Slow Cooker Chicken Teriyaki, from What2Cook.net
Brown Rice (make extra for weekend cooking)
Steamed Asparagus

Thursday, Vegetarian

Baked Rigatoni with Ricotta and Spinach, from Mom Favorites on Chiquita Moms
Roasted Carrots

Friday (Optional Vegetarian)

Portobello Pizzas, from Mom Favorites
Mixed Greens Salad

Weekend Entertaining

Steamed Edamame with Sea Salt
Salmon Teriyaki Skewers, from Simply Recipes (roast extra salmon for Lunch)
Fried Rice with Egg, from Food Network (with extra rice from Wednesday cooking)

Weekend Breakfast

One Dish Blackberry French Toast, from Southern Living

Lunch Idea 

Wild Salmon Vegetable Salmon: From A Haromony Eating (make extra salmon Thursday night!)
