Yikes.  I’ve fallen behind in my 52 Weeks of Sweets, haven’t I?  In my defense, my family has had a lot going on with school ending, vacations, and the loss of our family pet. 🙁

But today, I aim to get back on track.  With my cooking and blogging schedule, with work, and with exercise.  Time to dust off my apron and my running shoes.  It’s high time to celebrate summer with an updated version of the iconic Apple Pie.

Tart granny smith apples, batter with loads of apple pie spices, and a creamy salted caramel topping will have your summer BBQ guests swooning! For this version, I decided it would be fun to slice and core the apples like doughnuts, coat them in an apple-pie spiced batter, and deep fry them in peanut oil.  Then, generously drizzle them with caramel sauce and a sprinkling of salt.  #micdrop

If you’re unfamiliar with frying foods, using peanut oil is critical in this recipe.  Peanut oil has a high smoke point, creating a surface seal that locks the food’s natural moisture allowing the steam to cook the food from the inside out. The result is a delicate, golden crispy outside and a juicy, tasty inside.  And, with LouAna Peanut oil, you can be sure that your favorite fried dishes will be crispy, crunchy to perfection!

Fill a large heavy-bottomed pot with three-four inches of LouAna Peanut oil and bring to 350 degrees Fahrenheit.  If you don’t have a frying/candy thermometer, you’ll know it’s ready once you drop in a piece of batter and it pops up immediately to start cooking.

While you’re oil is heating, prepare your batter then peel and slice your apples (I got about 5 good slices per apple).  Using a small round cookie cutter, punch out the cores.

When the oil is ready, dip the apple slices into the batter and, using a fork through the center ring, allow the excess batter to drip off.

Place the battered rings, carefully, into the hot oil, cooking about three to four rings at a time.  Crowding the pan will reduce the heat of the oil and not allow them to get golden.

Flip the rings occasionally so they cook on both sides, then remove the slices to baking sheets coated with paper towels to drain.  While hot, dust them with extra super-fine sugar.

Cook the remaining apple slices, and garnish with caramel sauce and sea salt.  Serve warm!

Ingredients

  • 4 Granny Smith apples
  • LouAna Peanut Oil (enough to fill a large pot, three inches high)
  • Batter Ingredients:
  • 1 cup all purpose flour
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon freshly grated nutmeg
  • 1/4 teaspoon allspice
  • 1/4 teaspoon cinnamon
  • 2 tablespoons superfine sugar + more for sprinkling after frying
  • 1 large egg
  • 1 cup + 2 tablespoons low-fat buttermilk
  • Garnish: Carmel sauce and sea salt

Instructions

  1. Fill a large heavy-bottomed pot with three-four inches of LouAna Peanut oil and bring to 350 degrees Fahrenheit.  If you don't have a frying/candy thermometer, you'll know it's ready once you drop in a piece of batter and it pops up immediately to start cooking.

  3. Peel and slice your apples (I got about 5 good slices per apple).  Then, using a small round cookie cutter, punch out the cores.
  4. When the oil is ready, dip the apple slices into the batter and, using a fork through the center ring, allow the excess batter to drip off.
  5. Place the battered rings, carefully, into the hot oil, cooking about three to four rings at a time.  Crowding the pan will reduce the heat of the oil and not allow them to get golden.
  6. Flip the rings occasionally so they cook on both sides, then remove the slices to baking sheets coated with paper towels to drain.  While hot, dust them with extra super-fine sugar.
  7. Cook the remaining apple slices, and garnish with caramel sauce and sea salt.
  8. Serve warm!
