Mouth Watering Meals: Family Meal Plan Collection

Monday, blah-day.  Is it as yuck where you are as it is here?  After a few days of cold rain, I’m ready for some darn spring! What happened to sunny mornings at the farmer’s market?  72 degree runs on the greenway? Flowers? Strawberries? I almost feel bad about complaining about the canker worms and pollen last week.  Mother Nature showed me!  And, it’s making me tough to showcase the best of spring foods in our family meal plan.

This is typically the time of year where I plan on making awesome salads and grilled proteins for dinner.  What’s better than pulling some fresh lettuces from the garden then topping it off with something smoky from the grill?  Nothing!  Unfortunately, my garden is less green bounty and more mud bath at the moment.  DIY spa treatment coming up on the blog later this week.  Just kidding.  Kind of.

While we wait for the rain to stop and let spring take its time to warm up to us Southern folk, we’ll continue with a few more warming and satisfying meals.   But, by the end of the week, bring on the grill!  Bring on the brewski’s!  Momma needs to get some good ‘ol vitamin D and hang out with some pals.  Come on over… you know what we’re making! 🙂

Monday, Reinventing Leftovers!

Pork and Sweet Potato Quesadillas:

On one tortilla, layer (leftover) mashed sweet potatoes and scallions, chopped grilled pork (leftover from last week’s menu), a handful of spinach, and a few tablespoons of colby jack cheese.  Top with second tortilla.  Repeat for as many people as you’d like to serve.  Place on greased baking sheet and cook at 375 degrees until warmed through, cheese is melted, and tortillas are browned.

Veggie Rice Pilaf – Cook brown rice in rice cooker and toss with various roasted veggies.  I like to use broccoli, red peppers, red onions, and mushrooms!
