Finally! Weekly Menu Plan, Spring Collection

Spring? Is it you? Are you here to stay? So far spring has been a major let-down with cold, rainy days. But, this week is looking up. In the South, it means, we better love every minute, because the heat is gonna come on faster than you can say “pollen.” I’m busting out some of my spring recipes that I’ve been hankering to try in this weekly meal plan.

Here’s hoping that we’ll be able to use that grill, eat outside and enjoy some perfect spring weather and food this week. Bon Appetit!
menus on mondays 4-8-13

Monday – Using up last week’s leftovers! (Optional Vegetarian)
Quiche – I plan to toss in some cooked sausage, leftover roasted green beans, and shredded carrots and various cheeses leftover from a cheese plate.  Original recipe from AllRecipes.com
Artichoke and Pea Saute, from Cooking Light

Tuesday 
Risotto with Yogurt and Peas, recipe from Food Network Magazine
Seared Scallops or Shrimp (I’ll be making whatever looks better at the store)

Wednesday
Broiled Tilapia Gyros, recipe from Cooking Light
Sweet Potato Waffle Fries

Thursday, Gluten-Free
Hoisin Glazed Steak with Sesame Vegetables, recipe from Cooking Light (check sauce ingredients for gluten content, if you are on a strict gluten-free diet)
Whipped Parsnips, recipe from Food Network Magazine

Friday, Vegetarian
Linguine with Spinach Herb Pesto, recipe from Cooking Light
