A Do-Able Summer Menu: For Busy Families

This week is gonna be a normal week. I swear.

That’s what I keep telling myself and for the last three months or so, I’ve failed to live up to my mantra.  Packing, moving, unpacking, birthday parties, holidays, travel, oh my.  But, this week…. This week, I’m going to go to the grocery store, pick up my CSA box, and make some meals at home.  I mean it.  Do you?

Whether you just have good intentions or you actually have the ability to see them through, here’s healthy, seasonal menu for those that intend to cook at home this week.

Best of luck.  I for one know that I’m going to need it.  It might help if I throw out the delivery Chinese menu.  Just sayin’.

Monday

Oven Tacos, Recipe from Mommy I’m Hungry
– I plan to use re-fried black beans (but use ground beef or cooked chicken if you like) and cheese, cook them, then top with a mexi-slaw (shredded coleslaw with a cumin vinaigrette)
