If you were to look in my fridge – you would come to one two conclusions, the first being I love Greek yogurt, the second thing (which I realized upon strating this mission) was that it could also use a good wipe down.
I honestly crave yogurt with fruit and granola pretty much every morning. After getting Graham off to school, I try to sit down with my breakfast and a magazine and take a few moments for me. Sounds, good – right? Does it happen? Sometimes…
It seems like more and more often, my regular morning routine is turning into regular morning bedlam. Where are Graham’s shoes? Does he have a snack? Will, did you just really poop your pants? Jon, did you not feed the kids breakfast yet? Where’s the coffee? Oh no, is it really 7am and time for the bus? AHHHHH!
On these mornings, I let Jon manage the poo (can you blame me?), I find the shoes and snacks, and we grab breakfast as we run for the bus. The kids, always a fan of things in squeezable pouches, have recently discovered the beauty of Lifeway Kefir Organic Smoothies (in particular the Strawnana Split flavor – probably because they enjoy trying to say Strawnana).
Smoothies are usually special occasion treats, but because these things are so darn good for the boys, and so darn easy to grab on the go, it’s become a daily ritual. Perhaps, this is why they create the bedlam? To get their Kefir Smoothies? I think I may be on to something here…
Now, as I mentioned, I do like my Greek yogurt, but I also have discovered that I seriously dig Lifeway’s Kefir Smoothie. It’s tart (if you prefer the tart flavors when you get fro yo, you’ll love this), and it whips up perfectly with frozen fruit for breakfast-in-a-jar.
Pregnancy Bump + Lassi = Smiles. Plus, I can still see my toes! 🙂
Today, I experimented and came up with my own Tropical Lassi (a.k.a. Kefir smoothie + favorite frozen fruit + coconut milk) for breakfast perfection. Sure, I still plan to try and make time for a sit-down breakfast, but now I’m not going to mind if I have to blend up a quick smoothie for the road either!
Here’s the how-to, if you want to give it a go yourself:
Strawberry Pineapple Lassi Ingredients: 1 1/2 cups of Lifeway Kefir (I used the strawberry flavor) 1/4 cup of light coconut milk 8 oz. frozen pineapple chunks handful of sliced strawberries
