Hi everyone! I’m Selena from Look! We’re Learning! and I’m sharing five quick vegetarian recipes for families today! My family and I were vegetarians for a while and we quickly learned how to adapt some of our favorite meals to a meat-free lifestyle.
Here are five of our favorite vegetarian recipes. Even better, these can be made in 30 minutes or less – perfect for a busy weeknight dinner!
1. Veggie Fajitas
Bring some Mexican cuisine to your dinner table and make Veggie Fajitas! Just sauté some sliced mushrooms, bell peppers, and onions in a hot pan and fold them into a warm fajita shell. Be sure to serve these with toppings such as sour cream, shredded cheese, guacamole, and pico de gallo, so that your kids can make them how they like!
2. Monster Omelet
Omelets aren’t just for breakfast! Especially when they are stuffed with all kinds of vegetable goodies. If you want to make a family-sized monster omelet, beat 8 to 10 eggs in a large bowl and add seasonings. Heat some butter in a large skillet and then pour in the egg mixture. Chop up any vegetables you like, including red bell pepper, mushrooms, onions, zucchini squash, and tomatoes.
Sprinkle the vegetable mixture over one half of the egg mixture, then top with your favorite cheese. Let the eggs continue cooking until they are set, then fold the other half of the omelet over and cook for a couple of minutes more. Slice and serve.
3. Spinach Strawberry Salad
A sweet strawberry salad is just the thing to get your kids into eating their greens! Start with a bed of baby spinach, then top with sliced strawberries, Gorgonzola cheese, and – this is the kicker – candied almonds. Serve it with balsamic dressing on the side.
4. Portobello Mushroom Cheeseburgers
Portobello mushrooms make great stand-ins for burger patties. Rinse the mushrooms and remove the stems. Then oil a grill pan and place the mushrooms, top down, on the grill. Cook for two to three minutes, then flip.
As the other side of the mushroom cooks, add a slice of cheese to the top and let it melt as the “burgers” finish. Serve the mushroom caps on burger buns with all of the fixings. Don’t forget to add fries on the side!
5. Loaded Bean and Corn Burritos
This one is super simple, especially if you use canned black beans. Heat a can of black beans in a skillet until warm. Drain a can of kernel corn and add to the pan. Add in a can of drained, diced tomatoes and season to taste. Divide the mixture among six soft burrito shells and top with cheese, shredded lettuce, and salsa.
