Lighter Mixed Berry Crumble Recipe – Perfect for Spring Parties, Entertaining, or for using up extra berries this summer!
Let’s be honest – I don’t bake very often. And, when I do it, I don’t do it well. Probably because I like to think that I can’t fail in the kitchen, so I try these impossibly difficult french dessert pastries and I end up with a whopping #pinterestfail. Sound familiar?
It’s been a tough lesson to learn, but when it comes the rules of cooking, I don’t obey them. So, in general, I now try to stray from “exacting” recipes. If I can’t add a pinch of this or swap out that, then you won’t likely find it baking up in my kitchen.
The other reason? Well, because I’ve been cutting back on sweets (and salts, and booze, and all of those wonderfully delicious things). Sad, but true.
But, it’s spring, and with spring comes entertaining and backyard parties, and holidays. And, lord knows I can’t have a shindig without serving a dessert. For shame.
Therfore, I’ve come up with this Mixed Berry Crisp. Not only is this a super flexible recipe – you can swap out the fruits for your favorites, add in rolled oats to the crumb mixture, and through in your favorite spice blend. But, it uses Splenda Sugar Blends – which helps cut back on the calories. DOUBLE WIN!
This recipe comes together in mere minutes! First, rinse your berries and add them to your baking dish.
Next, mix together the ingredients for the crumble (including Splenda Brown Sugar Blend and Splenda Sugar Blend), and sprinkle over your berries.
Bake, and serve. I love this with Vanilla Greek Yogurt, but ice cream or whipped cream would be tasty too!
Mixed Berry Crumble
Yield: 8 servings
Ingredients
4 cups of mixed berries
8 teaspoons Splenda Sugar Blend, divided
1 2/3 cups all-purpose flour
1/8 cup firmly packed Splenda Brown Sugar Blend
1/4 pound (1 stick), plus 3 tablespoons butter, softened
1 teaspoon vanilla extract
Instructions
Preheat your oven to 375 degrees F. Generously butter a 13 by 9-inch baking dish. Add the berries to the dish and sprinkle with 4 teaspoons Splenda Sugar Baking Blend.
Mix together the flour, Splenda Brown Suagar Blend, and the other half of the Splenda Sugar Blend in a bowl. Add the butter and vanilla and rub them in with your fingertips, working until the mixture isn’t smooth but looks like damp clustery sand. (Alternatively, you can use a mixer on low until you get pea sized crumbs.
Scatter the topping over the fruit to cover with a good layer of crumbs. Bake for about 40 - 50 minutes, or until the top is golden and some juice has oozed up a bit over the crust.
Allow to cool for at least 20 minutes before serving to allow the liquids to set up a bit. Serve with ice cream or vanilla Greek yogurt! Yum!
