Burger Bar Perfection: Pimento Cheese Spread

Jalapeno Pimento Cheese Spread - the perfect compliment to your burger bar and Backyard BBQ! summer | parties | entertaining My family and I have largely been eating a vegetarian diet for years now. And although we’ve begun to incorporate more meats into our weekly menu, we still really do love veggie-fare.

In fact, I’ve become quite the aficionado of the Veggie Burger. So much so, that even if there were regular burgers available, I’ll almost always pick the veggie burger instead.

Lately, we have been eating more meat simply because I’ve been on a quest to get more protein in my diet (by request of my personal trainer). So, I was thrilled to discover Boca Essentials: a line of vegetable- and grain-based patties that offers a source of “complete protein.”

I was recently sent a few of their new bold varieties and fell in love. I tried the Breakfast Scramble with potatoes (scrambled eggs and vegetables), Roasted Vegetables and Red Quinoa (with brown rice), and Chile Relleno (with green chile peppers, black beans and brown rice).

With the warmer weather (this weekend being the exception), I’ve been heating up the grill with these Boca Burgers, and I’ve been eating good!

My favorite? The Chile Relleno. And after tasting it, I knew it would be perfect with my favorite Jalapeno Pimento Cheese.

To make the Jalapeno Pimento Cheese Dip, mix:
1 cup of mayonnaise
1 pound of sharp cheddar cheese, shredded
½ tablespoon of minced garlic
½ small onion, minced finely
4 oz jar of pimento peppers, drained
¼ cup of diced jalapenos (pickled or fresh)

Serve the Jalapeno Pimento Cheese Dip with your favorite burger accoutremants, including lettuce, tomato, and my favorite – thin sandwich buns!
