I’m a sucker for family movies, especially ones that expose my children to different cultures.  After watching our Friday Night movies, we often incorporate some of the themes into our meals the following week.  Ratatouille, for example, was a perfect excuse to showcase some new veggies to my children in a fun way, and my kids discovered the merits of Dulce de Leche after watching Rio 2.  Lucky guys, right?

Now, as we welcome The Second Best Exotic Marigold Hotel to theaters (it started March 6th), my kitchen is ready to go with our favorite Indian dishes.  This multi-generational love story set in Jaipur is a rich backdrop for an inspired post-movie night dinner.

I adore vegetarian Indian cuisine, so I set of to World Market to pick up some global foods to help me with my main dishes, and a few accessories to dress up my table for the meal.

The menu? Channa Masala with Carmelized Onions and Mushrooms, a rich Veggie Korma, spiced Jasmine rice, and Garlic Naan with dipping sauces.  If ever there was a time for smell-o-vision, this would be it.

If you’ve never cooked Indian food before, don’t be intimidated.  From-scratch recipes can have tons of foreign-to-you spices in them, but with the aid of World Market and their amazing variety of Indian sauces, these dishes can be whipped up in no time with your favorite ingredients.

The first step of the process is to get your rice started.  I always use jasmine rice, as it’s perfect for soaking up the rich sauces of Indian cuisine. To my rice cooker, I just added a dash of tumeric, and a few cumin and mustard seeds.  If you don’t have those spices on hand, just don’t add them.  No biggie!

Now, Channa Masala may sound really exotic, but it’s very approachable.  Think garbanzo beans in a tomato-y gravy with a little curry.  Tasty Bite makes an awesome Channa Masala.  To dress it up just a tad, I sliced up an onion  and caramelized it in a skillet with some sliced mushrooms.

Then, I poured in two packets of Channa Masala and heated it through.

That’s it, y’all.  Soooo darn simple.  So flavorful.  And no one will ever know it took just a few minutes to whip up!

The Veggie Korma recipe is just as easy.  I chopped up some veggies that I had on hand and sauteed them over medium high heat with a splash of oil.

Once softened, I poured in the Tiger Tiger Mild Korma sauce.  The korma sauce is mild and creamy, with a hint of curry flavor to it.  It’s absolutely delectable.  I dare you to not take a spoonful of the sauce just by itself.  And again, it’s as simple as that.

Now, if you have a crew of hungry hippos dining with you, be sure to keep them sated with some naan and Major Grey’s Mango Chutney and some homemade raita.  The naan, which I got at my grocery store pre-made is also awesome to scrape up any leftover sauces in the bowl.

Channa Masala

Yield: 4[url:1][img:1][/url]

Ingredients

  • 2 packages of Tasty Bite Channa Masala
  • 1 onion, sliced
  • 8 oz. mixed mushrooms, sliced
  • 1 tablespoon vegetable oil

Instructions

  1. In a wok over high heat, add vegetable oil. Toss in onion and mushrooms and stir fry until golden. Reduce heat to medium low and pour in Channa Masala mix. Heat until warmed through.

Veggie Korma

Ingredients

  • 1 , 14.8 ounce jar of Tiger Tiger Kashmiri Mild Korma Sauce
  • 1 diced onion
  • 2 zucchini, diced
  • 1 carrot, thinly sliced
  • 1 small head of broccoli, chopped
  • 1 small head of cauliflower, chopped
  • 8 oz. mushrooms, sliced
  • 1 tablespoon of vegetable oil

Instructions

  1. In a wok over high heat, add oil and vegetables. Stir fry until softened. Reduce heat then pour in korma sauce. Stir until warmed through and serve immediately with jasmine rice and naan.

Raita

Ingredients

  • 1 cup of plain Greek yogurt
  • 1/2 English cucumber, diced
  • 1/4 of cilantro, chopped
  • 1/2 teaspoon salt

Instructions

  1. Mix all ingredients and serve with naan.
