Try this Chia Seed Dressing recipe to turn your summer salad recipe from ordinary to a nutritional powerhouse!
Given that this week is smack dab in between a trip to Italy and a trip to the beach, I’ve got one thing on the mind. Make that three. Work. Working out. And being mindful of what I eat.
It’s the plight of woman-kind.
I’m not the only one. My mom-friends all agree. It’s time to get as ready as possible to feel as comfortable as possible for swim suit season. Can’t give up now!
Although it’s been hot as Hades outside, there still have been some OK running days. Especially if you hit it up early enough. Which is just what I did not so long ago with some girlfriends.
A little run.
A little chatting.
And then? A little light lunch. The perfect no-guilt me time that every lady deserves.
Just be careful… it’s getting hotter every day (hello 100+ heat – yuck!), so although just last week it was manageable, it might be time to schedule a treadmill date instead of the greenway date! Sure, you can’t toss the kids in a stroller on a treadmill, but childcare is even better!
And for that light lunch? I whipped up my favorite smoothie recipe and served it with this Endive and Radicchio Salad with Chia Seed Dressing.
Sure, it sounds a little out-there as far as recipes go. In all honesty, I hadn’t yet made anything with chia seeds despite them being all the rage. Plus, I found this recipe on the SweetSwaps.com from Splenda Brand Sweeteners which I found intriguing.
I’ve been into making my own dressings lately, and thought using Splenda would be a great way to make the dressing a little lighter! Especially for a post-workout lunch! Did you know that swapping just one cup of sugar with one cup of SPLENDA® No Calorie Sweetener, Granulated can save more than 600 calories?

this looks so delicious!!
The sweet dreams honey vanilla tea recipe sounds really good! But I cannot find anywhere that tells me how much milk, honey and vanilla to use. I’m not sure if I am just missing it or if it just isn’t there. Thank you.
I use a ratio of 1 cup milk, 1 Tb. honey and 1 tsp. vanilla.
Thank you very much. I suddenly need to be on a no/low acid diet. I can have this! Thank you so much for your answer to my question.
This bright salad was the perfect lunch!
