Y’all know I’m BIG into Movie Night Friday. It’s our family tradition, and as long as my boys will tolerate my whims, we’ll be spending Friday nights eating pizza, cuddling on the couch in PJ’s, and watching family flicks. I freakin’ love it. And, for now, they do too!

Sometimes the affair extends beyond our family, and we invite friends over to sample our Friday night festivities, and adding sleeping bags and hanging out with friends in pajamas adds another layer of awesomeness to the event. The only drawback? One of our friends is allergic to gluten, which in the past has always meant that we have to make up a different dinner for him.

I’ve always felt bad. Could you imagine going through life watching everyone eat pizza and not be able to enjoy it yourself? It’s no way to live.

So, I was thrilled when on a recent shopping trip to Publix, I discovered that Freschetta makes a Gluten-Free pizza.

Freschetta® Gluten Free Pizza is certified by the Celiac Support Association, so this is a pizza that all gluten-free eaters can trust! I was even more thrilled when I discovered that it tastes just as great as their original recipe.

Our recent movie choice was Lilo & Stitch, and in keeping with the Hawaiian theme, I whipped up a Gluten-Free Hawaiian Pizza. Holy heck – delicious and super easy. Plus, suitable for everyone in the group!

First up, fry some bacon. Seriously, every recipe should start with that.

Next up dice up some pineapple. I went with canned pineapple chunks (hello, easy!), but purists can cut up some fresh pineapple if they like.

Layer up the awesome ingredients on your pizza then bake according to package directions, maybe adding an extra minute or two to account for the added ingredients.

Be sure to bake your pizza on a pan. I’ve found that heating up the pan along with the oven, then sliding the frozen pizza on top helps makes a crispier crust!
