I’ve now lived in my “new” house for two years.  Two. years.  Seems like it was just yesterday!  That fast forward button must be at it again.   I feel really settled in my “new” house.  For good reason, I ‘spose.  But, there is one thing I do miss terribly from our “old” house.  The garden.

We’ve planned on adding a garden to our backyard-scape, but it just hasn’t happened yet.  That, and adding photos to all of the picture frames around the house.  It’s only been two years, after all.  😉

Although it’s still in the works, it might be awhile before I actually see any fruit coming out of the garden.  That doesn’t exist yet.  Until then… I’ll be ordering from The Produce Box.

Here’s why that totally floats my boat: First up, it’s all local.  NC-based veggie, fruit, meat and cheese goodness.

Then, you can add to your order and swap items for those you prefer.  I added a cheese from Chapel Hill Creamery and locally-sourced beef.

Finally, put out a cooler and your produce will be delivered to your doorstep.  It’s like Amazon Prime, but better.  And y’all know how much I love my Prime membership! 🙂

Zucchini Fries Recipe

Zucchini Fries Recipe

Ingredients

  • 4 Zucchini
  • Olive Oil
  • 1/4 cup Parmesan Cheese, grated
  • 1/4 teaspoon Garlic Powder
  • Salt and Pepper to taste

Instructions

  1. Preheat oven to 450 degrees.
  2. Cut Zucchini into three-inch sticks. Toss with olive oil, Parmesan cheese, salt, pepper and garlic powder.
  3. Arrange on baking sheet in single layer. Bake for 25 minutes, flipping once.
  4. Serve!
  5. - Can easily be made with carrots, too.
