I’m no stranger to hosting an impromptu get-together for friends and family. I live for that kind of thing. I always keep a well-stocked pantry and fridge… just in case. Truly, my husband thinks I’m turning into one of those doomsday food preppers. In reality, I just always like to be able to whip up something to feed hungry bellies on the fly.
I was recently challenged to come up with a fun recipe for the Farm Rich Back Your Snack Contest. Using just a few ingredients including a fresh produce item from Walmart, it needed to be something that anyone could quickly put together but taste delicious.
With those requirements, I decided to make Sausage Caprese Kabobs with a Pesto dip. Sounds fancy, but it’s totally approachable, even for picky eaters.
Farm Rich Mozzarella Bites are stacked with seared smoked sausage and fresh grape tomatoes. Dip in pesto and we’re good to go. This is a perfect tailgating or football watching food (can’t wait – can you?), or a late summer entertaining recipe.
First bake the Mozzarella Bites according to package directions.
While that’s going on, slice the sausage into half inch circles and cook over medium heat until each side is well-seared and warm through. Also prep the Pesto Sauce (or you could make your own or even buy one that’s premade… up to you!)
Trim wooden skewers to size, then assemble: Mozarella bites, sausage, then grape tomato.
Serve immediately and wait for it… wait for it. Yup, clean plates! (Make more than you think you’ll need; these things go fast!)
