How are your Christmas lists going folks? I have to admit I have quite a bit of shopping left to do. Oh, and the kids still want to have a meet and greet with Santa. And those neighbor presents still need to be delivered. It’ll get done eventually… Right?
What have I done? Well, I’ve got my Christmas Eve Menu down pat. Step aside gifts and cards, Santas and stockings. I’m excited about Christmas food! My mom hosts our actual Christmas dinner, but I get to do Christmas Eve and morning for my family at our house and planning for these meals makes me feel all warm and fuzzy on the inside.
Christmas cooking is all about comfort foods and favorites that we don’t usually treat ourselves to during the year. Everyone in my family has a holiday “favorite,” and I’m happy to indulge. (Within limits, BoBo.) There’s roasted brussels sprouts for my husband, Sausage and Egg Casserole for my dad. And, creamed corn for Aunt GiGi and Uncle BoBo.
Creamed corn is the newest addition to our holiday feasts, but one that I’ve quickly become accustomed to! As it’s not a recipe that has been vetted by decades of Christmas dinners, I’ve been playing around with different recipes and think I’ve finally settled on a favorite, using the slow cooker, Kraft Philadelphia Cream Cheese and a secret ingredient… a Parmesan cheese rind!
