One of the most terrifying tasks I’ve had of late, was to make a snack for my son’s class. Requirements: Use wholesome ingredients to create a snack that young children can make. Must be gluten-free. And, not be considered a dessert. Phew.
What’s a mom to do? She scours the internet for “gluten-free” options. We’re not gluten-aholics over here, but it’s not something I strictly have avoided.
My research led me to realize that there really are quite a lot of easy substitutes or replacements for gluten-laden products and that the term “gluten-free” is not as terrifying as at first it might seem. There are thousands and thousands of Gluten Free treats on Pinterest, alone.
The result of my findings? Well, I tweaked a few recipes to make a new family favorite – Chocolatey Cereal Snack Bars.
To make this family friendly snack, grease a 9×13 dish. In a medium sized saucepan, heat coconut sugar and honey over medium heat.
Bring to a gentle boil, then remove from heat and gently stir in peanut butter until well-blended. Pour mixture over cereal, salted pepitas, and dried cranberries. Stir to combine then transfer to a greased 9×13 dish.
Allow to cool until firm, then cut into bars. Store in air-tight containers for up to three days.
Gluten Free Cereal Snack Bars
Ingredients
- 1/2 cup coconut sugar
- 1/2 cup honey
- 1/2 cup (creamy or chunky) peanut butter
- 3 cups Gluten-Free Chocolate Cereal
- 1/2 cup roasted and salted pepitas (pumpkin seeds)
- 1/2 cup dried cranberries
Instructions
