What do you do when it’s 5:30 and the kids are screaming that they are hungry? You’re worn out and most of the meat you have is in the freezer. Lot of good that does you. Panic time. Maybe it’s a delivery pizza night? Nope… Sheet Pan Sausage Dinner to the rescue!
You’ll LOVE this recipe because of how easy it is. Because no matter what weird combo of “Chopped”-style ingredients you have in the fridge, you can make something pretty tasty. Because it’s done in 30 minutes.
I always keep a link or two of smoked sausage in the fridge. It’s good for those “what should we have for dinner tonight?” quandaries. I like the turkey kind, but get what you like. Now, I’m going to share a recipe with you, but really – the only thing to keep in mind is to keep vegetables cut up to about the same size and you’re good!
My Sheet Pan Sausage Dinner includes sweet potato, poblano peppers, onions, mushrooms and… sausage. After I photographed my ingredients, I found some Brussels sprouts too, so I tossed those in as well.
Easy Sheet Pan Sausage Dinner Recipe
Drizzle a generous amount of olive oil and give the veggies and sausage a nice little toss. Season with salt, pepper and grill seasoning if you have it! Bake for 25 minutes or so, stirring once or twice.
You want to caramelize the veggies on all sides and make sure the veggies and sausage are cooked through.
All that’s left to do is serve it up! Use leftovers in a breakfast frittata (if you there are any)!

Ingredients
- 1 package smoked sausage
- 4 cups chopped veggies (Potatoes, carrots mushrooms, peppers, onions, Brussels sprouts, broccoli and green beans all work well)
- 3 tablespoons olive oil
- Salt, pepper, and grill seasoning (optional)
Instructions
Preheat the oven to 425 degrees Fahrenheit. Cut the sausage into two or three inch pieces, then cube up everything else as well. Most of my veggies are about 1" in size after I cut them up.
