Whenever I make these carrot fries… I get asked for the recipe.  Which is funny, in a way.  I mean, besides carrots, olive oil, salt and pepper, there’s only one other ingredient.  Just one.  But you know what?  It MAKES the recipe.  For realz.

And the great thing is… once you start using it, you’ll find ways to incorporate this “secret” ingredient into other recipes too.  From stews, to popcorn, marinades to sauces… it’ll be one of your go to spices.  Ready to find out what it is?

Welcome Garam Masala to the party.  To which my husband would say… gara-ma-who?

Sure, it may sound obscure, but it’s a common spice blend used in Indian cuisines.  You can find it in the spice aisle of most grocery stores.  And if you think you don’t like Indian food, you’ll still love these carrot fries.  It just works.

No-Longer-a-Secret Ingredient Carrot Fries

Preheat your oven to 450 degrees Fahrenheit.  Peel and pound of fresh carrots.  I like to use regular old carrots for these, as I’ve found that the baby ones are too wet and don’t get as crunchy in the oven.  Cut them in half length-wise, then slice each half down the center.  You may even need to slice them again if your carrots are huge.

Toss with olive oil, salt, pepper and yes, garam masala.

Roast in the oven for 20-25 minutes, tossing once.  They’re done once tender and they have the right amount of char for you.   If you have it, toss them with parsley and a squeeze of fresh lemon prior to serving.  And…. dig in!!

You can serve these with nuggets to the kids and they won’t miss the fries.  Or… you could get all ‘adulty‘ and whip up a little gourmet dinner to go along with.  I’ll link this Scallops with Lemon Orzo recipe that I created above once it goes live on my client’s website!

Secret Ingredient Carrot Fries

Yield: 4 servings

Ingredients

  • 1 pound of fresh carrots
  • 2 tablespoons of olive oil
  • salt and pepper to taste
  • 1 tablespoon Garam Masala
  • Optional: fresh parsley and juice of 1/2 lemon

Instructions

  1. Preheat your oven to 450 degrees Fahrenheit.
