Looking for an easy summer dinner? This Balsamic Herb Steak Kebabs & Garlic Butter Rice is a perfect grill-night recipe, and fabulous if you need a make-ahead solution for busy week night meals.
You know how to get heads turning at a swim meet? Bust in there with this dinner. Forget the lukewarm pizza and the hot dogs cooked by high-schoolers. When we saddled up next to our teammates on the sidelines with Balsamic Herb Steak Kebabs & Garlic Butter rice there were many jealous (and hangry) looking parents. Next time I’ll bring enough to share. 😉
When you cook for work, you don’t always get to cook when it’s convenient. If I need to get photos, I usually do my photoshoots around 1 pm. So the fact that we had to be at a swim meet in the evening, just meant we got to dine pool-side in gourmet style. Can’t say that I minded.
What I loved about this recipe besides how easy it was to cook, was that the recipe is also perfect hot and at room temperature. Making it a fabulous (pool-side) picnic or potluck option as well!
Have you gotten a chance to try Uncle Ben’s® Flavor Infusions yet? Uncle Ben’s® Flavor Infusions is the only 10 minute rice with natural flavors steamed into each grain, and they come in five fun flavor varieties. With 8 servings, it can feed the entire family with one pouch (even my carb-loading little athletes), and comes with no preservatives or artificial ingredients.
I’ve often admitted that when it comes to rice, I generally can’t get it right. Unless it’s in the rice cooker. But, without the extra hassle of a spice sachet Uncle Ben’s® Flavor Infusions made this stovetop rice easy-peasy. Served with Balsamic Herb Steak Kebabs, this is a winning dish!
At least it fueled these little guys on to victory!
Balsamic Herb Steak Kebabs & Garlic Butter Rice
Combine veggies, steak and marinade ingredients in a large bowl. Allow to marinade in the refrigerator for 30 minutes, or up to 8 hours (if you have the time).
When you’re ready to get cooking, preheat a grill to high heat. Thread metal skewers with the meat and vegetables, ensuring you leave enough space between to allow the air to circulate. This helps ensure that everything gets cooked properly.
Just before putting the skewers on the grill, prepare the Uncle Ben’s® Flavor Infusions Garlic & Butter according to package instructions. If you time it right, the skewers and the rice will be done at about the same time.
With your rice cooking on the stove, lay your skewers out on the greased hot grill in a single layer. Cook the skewers about 3-4 minutes per side, depending on the heat of your grill, and how done you like your steak.
Remove the skewers from the heat and serve on top of a bed of Uncle Ben’s® Flavor Infusions Garlic & Butter rice.
Um… yum!
