“I wanna learn how to use chopsticks,” my six-year-old declared with a devilish smile after reading Chopsticks one night before bed. “Chopsticks” is the sequel to one of our favorite books, “Spoon”, by Amy Krouse Rosenthal. Because of Rosenthal, I’ve already been subjected to feeding a toddler soup. Now chopsticks? Thanks a lot lady. 😉
But, since my oldest son’s favorite food is sushi, and I make something Asian at least once a week, may as well get down to business.
Time to bust out the rubber bands and make kid-friendly chopsticks. If you don’t know how to do it, there are plenty of YouTube videos to lend a hand.
Then, because you can only call out for Chinese so many times before you have to start inviting the delivery guy to family events, I decided to whip up something myself. Well, sort of.
I recently discovered Ling Ling Fried Rice in the freezer section of my grocery store and had to give it a try. I love making homemade fried rice. But, y’all. It can be a commitment. And how often do you just happen to have leftover fried rice in the fridge? Not as often as I’d like for my fried rice cravings.

I selected the Chinese-Style Vegetable Fried Rice variety. It paired perfectly with some chicken that I simply marinated and stir fried in the same skillet I used to cook the rice. Hello easy cleanup.
Oh, and did I mention that the kids ATE IT? With chopsticks, to boot? Seriously. #WINNING!
Chicken Teriyaki with Veggie Fried Rice
Cut one pound of chicken tenderloins into 1 inch chunks. In a medium bowl toss the chicken with one cup of your favorite chicken teriyaki sauce. Allow to marinate for 30 minutes or up to 8 hours in the refrigerator.
Heat a large skillet to medium high heat. Pour in one tablespoon of vegetable oil. Place half of the chicken in an even layer and allow to cook on one side for 3-4 minutes before flipping. This will give it a nice sear and golden color. Allow it to cook on the other side for another 3-4 minutes then remove to a plate and repeat the process. Once the chicken is cooked through, cover it to keep it warm.
Wipe out the skillet, if necessary (I kinda like the little crispy chicken bits getting in to the rice), then cook the rice according to package directions.
Once done, dish out the rice and serve the chicken on top. Sprinkle sesame seeds on top for a little extra flair.
