It’s always a good time when brats are on the menu… but the party really gets started when you serve these mouth-watering Yuengling Brats with Caramelized Beer Onions. A match made in foodie heaven!
My oldest son went romping around Austria and Germany with his grandma this summer. To say I’m jealous would be an understatement. I adore everything about my experiences in Europe, but most especially Germany. The beer! The brats! The friendly people!
I assume my son didn’t drink much beer (right, Grandma???), but surely he chowed down in style.
To ease my jealousy (just a tad), I decided to host my own little bratwurst dinner – a nod to everything I love about beer garden grub, but with an American twist.
The star of the show is Smithfield® Yuengling® Bratwurst. This limited edition Smithfield® Craft Collection™ bratwurst infuses real Yuengling Traditional Lager along with premium cuts of pork, a special blend of sweet and savory spices, and no MSG.
Why Yuengling? Because it’s as steeped in American beer culture as you can get! Yuengling is America’s oldest brewery (located in Pottsville PA). Their flagship lager is rich in amber color with roasted caramel malt for subtle sweetness. It’s a beer-brat combo that can’t be beat!
To knock this meal out of the park, we boiled our brats in more Yuengling beer before hitting the grill and then served them with caramelized onions flavored with beer. Set on top of a fresh pretzel roll it’s verdammt gut! (That’d be German for damn good.)
Smithfield Yuengling Brats with Caramelized Beer Onions
In a large dutch oven, pour in 3 1/2 bottles of beer.
Add the sausages and the bay leaves to the beer and bring to a boil. Simmer on low for 15 – 20 minutes.
Meanwhile, bring a large skillet to medium heat. Add the olive oil and butter and allow it to melt completely. After you’ve thinly sliced the onion, place them in the skillet and sprinkle in the sugar and salt, tossing to coat.
Cook over medium heat, tossing frequently until they begin to brown. After 20-25 minutes, pour in the remaining 1/2 of the beer. Bring the heat up to medium high and stir constantly until most of the liquid has evaporated. Remove from heat and place in a serving dish.
When you’re ready to cook-off the brats, bring your grill to medium high heat. Place the boiled brats on the grill, cooking on 2-3 minutes per side. They should already be cooked through; you just need a nice sear.
Slice the pretzel rolls length-wise and scoop out a little bit of the inside to fit your brat. Top with onions, cheese, mustard and serve with a cold Yuengling Lager!

- 2 packages of Smithfield Yuengling Bratwurst
- 4 bottles of Yuengling Traditional Lager
- 3 dried bay leaves
- 2 large Vidalia onions, sliced
- 1 tablespoon butter
- 1 tablespoon olive oil
- 2 teaspoons sugar
- 1 teaspoon salt
- 6-8 pretzel rolls
- Optional: Beer cheese, spicy brown mustard, ketchup, parsley
Instructions
