If you’re like me, you’ve been doing a LOT more cooking at home. More than I would’ve ever imagined. (Considering I’m a food blogger and a recipe developer, that quite a bit!) And if you’re like me, you’re also desperate for some new recipe ideas. Which is why I’m sharing this beer poached grilled corn recipe today!

After experiencing it for the first time this summer, I was feeling the need to sip a cold one and light up the grill for a good ol’ cookout-style dinner. Stella Solstice is perfect for sun-filled summer days. With a delicious, refreshing golden lager boasting subtle citrus notes and triple filtered for a smooth dry taste and a crisp finish, not only is it perfect for a hot summer day, but also lends itself well to cooking. Like in this beer poached grilled corn recipe!
Beer Poached Grilled Corn
Fun and easy to make, this Beer Poached Grilled Corn recipe is perfect for any summer cookout or BBQ. First you’ll want to pull back the corn husks, but leave the attached to the cob. When they hit the grill, it lends an additional smokey layer to the finished product.
Fill a large Dutch oven with your Stella Artois® beer of choice – about two-thirds of the way up the pot. Bring it to a boil, then insert the corn, keeping the husks out of the pot. You’ll want to cook these until they are just tender, about 6-8 minutes. Remove the corn from the pot. At this point, DON’T THROW OUT THE BEER! It’s perfect for poaching brats, shrimp, or even chicken!
Preheat your grill and coat generously with oil. Place the corn on the grill and cook, about 4-5 minutes per side, until perfectly charred. Remove to a serving tray and garnish with crumbled cheese, melted butter or olive oil, and spices.
Serve your Beer Poached Grilled Corn with grilled brats or beer-poached shrimp, and a Stella Solstice!

Beer Poached Grilled Corn
Ingredients
- 6 ears of sweet corn
- Stella Artois® Beer
- Oil, for greasing the grill
- 1/4 cup butter, melted
- 1/4 cup crumbled goat cheese
- 3 Tbsp. chopped Italian parsley
- 1/4 tsp. smoked paprika
- 1/4 tsp. garlic powder
- Salt and pepper, to taste
Instructions
