This mayo-free caramelized onion dip recipe, video & post is brought to you by Morinaga Nutritional Foods, Inc., maker of Morin-Nu® Silken Tofu and The Motherhood. All opinions are my own.
Our mayo-free caramelized onion dip is perfect for vegans (and is also gluten-free!). But, I’m guessing no one will know that the main ingredient in this recipe is silken tofu!
I have several friends that think mayo is one of the grossest things in the world. While I don’t concur (sauerkraut is way worse), I oblige, because, well, they’re my friends. So it was on the occasion of me hosting one of these said-friends for dinner, that I decided to investigate alternative ingredients for one of my favorite apps… Caramelized Onion Dip.
Not only does this tofu version pack way-less guilt, but I don’t think many would even notice the difference. In this mayo-free caramelized onion dip, I’ve substituted the traditional mayonnaise and sour cream for Mori-Nu Silken Tofu Organic Nigari by Morinaga Nutritional Foods, Inc. The texture of Organic Nigari silken tofu is made with sea minerals, is smoother and creamier with a slightly higher water content than dense, spongy tub tofu.
This Japanese-style organic Nigari Tofu made, with sea minerals has no preservatives and is gluten free. Because they are packed in a unique aseptic package that protects fresh tofu from light and bacteria, it has a long shelf-life with no preservatives and no refrigeration required.
Mayo-Free Caramelized Onion Dip
Y’all! This recipe is super-easy, and if you soak the cashews while the onions are cooking, it won’t take you long either.
So, get those cashews in some hot water, and slice up those onions and shallots. Over medium heat, add your olive oil and onions (and shallots), along with the sugar and a sprinkle of salt and pepper.
Cook for about 20 minutes, stirring occasionally, until the onions are a deep golden color. Remove from the heat.
Drain the cashews after 30 minutes of soaking. Add them to a blender, along with the silken tofu, veggie stock, lemon juice, salt, pepper, garlic powder, and half of the onions. Give the blender a whir and process until smooth.
Pour out into a serving bowl, and stir in the remaining onions, leaving a few for garnish. Top with thyme leaves and serve with your favorite dippers. Fresh veggies are great, but my favorite (and yours too, don’t lie!) thing to dip are kettle chips!
