The only thing I’m unclear on… do you serve these savory ham and cheese scones with coffee?  A mimosa?  Or maybe a glass of wine? Will someone just point me in the right direction?  I’ll take two of what’s he’s having.

If I’m being honest, I’ve never been a huge fan of a big ol’ ham.   It wasn’t until I whipped up these five glazes for Harris Teeter’s blog that I realized how darn good a baked ham is.  So good, in fact, I’m not making my favorite lamb dish for Easter and am instead making ham.

Sorry dad.  No leftover lamb biryani this year.

Instead, you’re getting leftover ham and cheese scones.  Which are freaking awesome.  And smell like bacon when baking.  And the smell of bacon makes everyone happy.

Savory Ham and Cheese Scones

Leftovers take centerstage in these savory ham and cheese scones.  Easy to make, the pan fried bits of ham bring a big flavor boost to the humble scone. 

Preheat oven to 425 degrees Fahrenheit and grease a scone pan or baking sheet.  Set aside.  In a large skillet brown diced ham until crispy.  This is optional, but totally worth it.

Over a large bowl, sift together the flour, sugar, baking powder and salt.  This prevents clumps of baking soda which can be a day ruiner to the one that bites into it.

Using your hands, mix in the butter cubes until the dough has a pea-sized crumb-like consistency.  Stir in the buttermilk, ham and chives until you get a soft ball of dough.

Flour your work surface and pat the dough out to an 8″ circle.  Cut the scones into 8 triangles and place in your baking dish or on your greased baking pan.

Brush with melted butter and sprinkle with Parmesan, then bake for 17 – 20 or until firm and golden.  Enjoy warm or allow to cool completely before storing.

Savory Ham & Cheese Scones

Yield: 8 scones

Ingredients

  • 2 cups all-purpose flour
  • 1 Tb. sugar
  • 1 Tb. baking powder
  • 1/2 tsp. salt
  • 1/2 cup cold butter, cubed + 1 Tb. butter, melted
  • 3/4 cup buttermilk*
  • 1/2 - 3/4 cup cubed ham
  • 2 Tb. chopped chives
  • 1/3 cup grated Parmesan

Instructions

Notes

*make your own buttermilk by combining 1 cup milk with 1 Tb. lemon juice or white vinegar.  Allow to sit five minutes before stirring and using in a recipe.
