There are occasions when I don’t have to consider my children when I’m making a meal. This is a recipe to bust out at such a time. This Fancy Pants Grilled Cheese is not your usual tomato-soup dipper. This is a hearty, cheesy, flavor bomb to be enjoyed on lazy afternoons or as a late night snack.
When I’m making a Fancy Pants Grilled Cheese sandwich, the first thing to consider is the bread. It needs to have a hearty texture and a seed-coated crust, which is why I’m digging Dave’s Killer Bread. Fancy Pants Grilled Cheese
Lay out four pieces of Dave’s Killer Bread. Spread a thin layer of spicy brown mustard atop each. Top with sliced brie. Spread jam over another four pieces of bread and stack them on top.
Bring a griddle to medium heat. Coat generously with cooking spray. Cook the sandwiches on each side, until golden and the cheese is perfectly melty. About 4-5 minutes per side should do the trick.
Remove from heat and serve immediately for ooey, gooey goodness.

- 8 pieces Dave’s Killer Bread’s 21 Whole Grains and Seeds
- 2 Tb. spicy brown mustard
- 1 lb. brie, cut into 12 slices
- 1/2 cup homemade berry preserves (or store bought, if you must) 😉
Instructions
- Lay out four pieces of Dave's Killer Bread. Spread a thin layer of spicy brown mustard atop each. Top with sliced brie. Spread jam over another four pieces of bread and stack them on top.
