Dinner in 20: Grilled Chicken Caprese

Every year, I get pumped about the end of the school year.  Almost as excited about it as the kids.  I dream of sleeping in, lazy pool days, and catching fireflies in the yard at night.  What I forget to consider is the oppressive heat and the insane schedules of managing swim team, day camps and travel plans.

Needless to say, summers are crazy-busy.  Fun, but non-stop.  On top of the aforementioned activities, we also have tons of family birthdays throughout the summer, which means regular family dinners.  Y’all know I’m no stranger to feeding a crew, but more than ever, in the summer I wanna kick back and relax when I have company.  Even more importantly, I want to minimize the time in the kitchen and at the grill.  ‘Cause, baby… it’s hot outside!

Our Grilled Chicken Caprese recipe comes together in less than 20 minutes with just five-ingredients.  With melted cheesy goodness and fresh summer produce, this recipe is perfect for busy weeknights, but elegant enough for summer supper parties!

That’s why I’m TOTALLY loving this Grilled Chicken Caprese recipe.  Not only is it ready in less than 20 minutes (!!!), but it has just five ingredients and is bursting with incredible flavor. It’s also pretty picture-perfect, if I do say so myself.

My favorite part of this recipe is the ooey-gooey cheese that melts on top of the grilled chicken.  Let’s be honest, any time I can describe something as ooey-gooey, it’s probably gonna be my favorite part of that dish.

With this Grilled Chicken Caprese, we can thank Sargento® Blends™ for the melty-goodness. Sargento Blends Sliced Cheese combines our favorite cheese varieties in one all-natural slice.  The Sargento Blends 5 Cheese Italian Slices boasts the creaminess of Mozzarella with Romano, Parmesan, Fontina, and Asiago cheeses, the perfect combo for our caprese-style chicken.

Grilled Chicken Caprese

Preheat your grill to high-heat.  Season the chicken breasts generously with salt and pepper.  Coat the grill with cooking spray, then cook the chicken breasts, about 6-7 minutes per side or until cooked through.

Turn the grill off, then place two slices of Sargento Blends 5 Cheese Italian Slices atop each chicken breast.  Lower the grill lid and let the heat melt the cheese.  Once you have melted cheese perfection, remove the chicken from the grill and top with sliced ripe tomatoes and basil leaves.  Drizzle balsamic glaze on top and serve immediately.

Grilled Chicken Caprese

Yield: 4 servings

Our Grilled Chicken Caprese recipe comes together in less than 20 minutes with just five-ingredients.  With melted cheesy goodness and fresh summer produce, this recipe is perfect for busy weeknights, but elegant enough for summer supper parties!

Ingredients

  • 1 1/2 pounds chicken breasts
  • 1 package Sargento® Blends™ 5 Cheese Italian Slices
  • 3-4 small ripe tomatoes, sliced
  • 1 bunch of basil
  • 1-2 Tb. balsamic glaze
  • salt and pepper to taste

Instructions

  1. Preheat your grill to high-heat.  Season the chicken breasts generously with salt and pepper.  Coat the grill with cooking spray, then cook the chicken breasts, about 6-7 minutes per side or until cooked through.
